Color Accent: Black & White + 1 Color

Call me a slow learner/discoverer but I just found out how to do those pretty shots where everything is black and white except for one color! Ala Schindler's List's girl-in-red. I've seen pictures using this feature before but I thought they were achieved through photoshop or some other photo editing software.
